Paul John Whisky Redefines Malt Education with an Intimate 'Cask-to-Glass' Journey Led by Sonal Holland

Mumbai: Indian consumers are no longer approaching single malts like conventional whiskies. The modern drinker is becoming far more aware about the way they consume spirits, understanding tasting notes, cask influence, pairing possibilities and even how cuisine can shape the whisky experience. Reflecting this shift, Paul John Whisky, India’s most internationally acclaimed single malt whisky, hosted an intimate whisky and dining experience at GIGI Bombay, Bandra, bringing together a select gathering of collectors, luxury enthusiasts and industry tastemakers for a deep dive into the art of the cask.
 
Curated and led by Sonal Holland, India's first and only Master of Wine and one of the country's most respected Wine and Spirits Experts, the evening explored the world of wine cask-finished single malts through a guided tasting of four award-winning Paul John expressions. Designed as an immersive sit-down experience rather than a conventional brand showcase, the masterclass focused on how casks shape aroma, texture, flavour, and complexity in whisky. The evening saw a curated mix of guests including top malt collectors, Michelin-starred chefs, and pioneers from the city’s luxury retail sector.
With Indian consumers beginning to approach single malts more thoughtfully, Paul John Whisky reflected a growing shift where whisky is no longer experienced purely in nightlife settings or consumed casually, but appreciated as part of a larger lifestyle and dining experience centred on flavour, pairing, conversation and craftsmanship. Each expression was paired with a specially curated course, turning the evening into a sensory journey where food and whisky evolved together through the experience. 
 
Paul John Brilliance opened the evening with the unpeated flagship that serves as the purest expression of Paul John's distilling philosophy. Light, elegant, and approachable, it set the foundation for everything that followed. Paired with the Bocconcini Cracker, bocconcini cheese, grilled zucchini, asparagus, herb dressing, toasted pine nuts, and malta orange zest. The freshness of the first course mirrored the clean, open character of Brilliance beautifully.
Paul John Port Select Cask came next, finished in the Port wine cask, sourced from Portugal, bringing in the richness and dried fruit depth that gave the evening its first real moment of indulgence. The Port cask finish lends the spirit a warmth and generosity that is immediately distinctive. Paired with the Wine Glazed Sweet Potato Gyoza, sweet potato, lemongrass, Thai bird chillies, and a burnt honey glaze, or the Sicilian Prawns Gyoza with Sicilian lemon zest, garlic, and Thai chilli.  Both courses matched the spirit's depth with their own layers of spice, sweetness, and citrus.
Paul John Madeira Select Cask Finished in Madeira wine casks from the Portuguese island wine best known for its nutty, oxidative character, offered a more delicate and layered complexity, a quieter expression that rewarded patience and attention. Paired with the Truffle Risotto featuring Arborio rice, Parmigiano Reggiano, tempura enoki, shiitake, and truffle oil, or the Sous Vide Chicken with soy-honey jus glaze and creamy cauliflower puree, the earthiness of both courses drew out the Madeira's subtle, nutty depth in a way that felt entirely considered.
Paul John PX Select Cask, finished in handpicked Pedro Ximénez casks, and therefore named after the intensely sweet Spanish dessert wine made from PX grapes. The PX brought the evening to a deeply indulgent close with layers of dark fruit, Christmas cake and an almost dessert-like richness, underscoring just how transformative the right cask can be. Paired with the Cherry Raisin Cheesecake, a Biscoff crumble base, crème fraîche set cheesecake, cherry mousse, and fresh cherries, the pairing was the natural, inevitable conclusion to an evening built around the idea that great whisky and great food tell the same story, just in different languages.

The evening served as a benchmark for the evolving spirits landscape in India, proving that the modern drinker values craftsmanship and storytelling as much as the accolades themselves. Guests left not just having tasted exceptional whisky, but understanding exactly why it is exceptional.
